Presenting to you… the ULTIMATE breakfast omelet! Once in a while, it’s okay to indulge in some bacon, just trim off the fat and treat yourself. This omelet tastes like a BLT every bite. Surprise your family and cook this!

Ultimate breakfast omelet (serves 2)

  • 2 eggs
  • 1 avocado
  • 2 slices bacon
  • 1/2 sweet pepper, cut into thin strips
  • 1/2 cup low-fat mozzarella cheese
  • Pinch of salt
  • 1 Tbsp oil
  1. Place bacon onto a baking sheet and bake at a 400F oven for 15 minutes. When done, place bacon on paper towels to absorb the excess oil.
  2. Beat 1 egg with a pinch of salt. Heat pan with 1/2 Tbsp oil over medium high heat. Pour in egg and cook for 30 seconds.
  3. Turn heat to low. Sprinkle peppers, cheese and cook for 1 minute. Place bacon and try to flip over one side of the egg to create the half-moon omelet shape.
  4. Cook until cheese is melted. Top with avocado slices and enjoy!
