Reports have said that eating less meat is great for your health and the environment. A fun way to start is with #meatlessmonday! This tofu dish is perfect for that, so get ready to Instagram this!

Stir- Fry Tofu (Serves 4)

  • 1 lb tofu, extra firm, cut in thick strips
  • ½ lb carrot (cut into sticks)
  • ½ lb celery (cut into sticks) or green beans
  • ¼ cup oil
  • ¼ cup soy sauce
  • I clove garlic, minced
  • 1 Tbsp ginger, minced
  • 3 green onions, finely chopped
  1. Mix the soy sauce, oil, ginger, garlic. Add to tofu and marinate for 30 minutes.
  2. In a non stick pan, sauté the tofu with half of the marinating sauce for 3 minutes on each side, until golden brown. Set aside.
  3. Add the rest of the sauce and vegetables in the pan and sauté for 5 minutes until cooked. Now add the tofu.
  4. Turn off the fire add the green onions. This dish tastes great served with rice or pasta, enjoy!
