Sweet potato here acts as a natural sweetener, you won’t believe this but we only used 1 tbsp of sugar!

What’s also missing from this recipe? 1 Tbsp of butter and no eggs at all make this bread pudding much lighter and less greasy.

Sweet Potato Bread Pudding (Serves 12)

  • 1 loaf of wheat bread (or about 10 slices)
  • 2 cups Milk
  • 1 tablespoon butter
  • 1 tablespoon sugar
  • 1/2 tsp Vanilla
  • 2 large Sweet potatoes, peeled, cooked, and puree
  • 1/2 tsp Cinnamon
  • 1 tablespoon raisins
  1. Pour the milk into a large bowl and add the wheat bread. Let the bread soak for a few hours.
  2. Pre-heat oven to 350 degrees.
  3. Add the Sweet Potato puree, butter, and sugar. Stir together.
  4. Add raisins. Stir.
  5. Add vanilla and cinnamon. Mix well all the ingredients.
  6. Grease a cake pan.
  7. Pour the mixture into the cake pan.
  8. Bake for approximately 30 minutes.
