These mini peppers were a hit at the CentroNía CERPA Launch Reception! Easy to pick up and so sweet after grilling, they are perfect for a Mediterranean theme party!

  • 2 Pounds Mini Sweet Peppers (Orange, Red, Yellow – a variety looks nice!)
  • Olive oil to drizzle
  • Salt to taste
  1. Preheat oven to 400F.
  2. Place peppers on a baking sheet. Make sure it’s one layer so that all of them have a chance to brown. Lightly drizzle with some olive oil.
  3. Roast for about 30 minutes until soft and charred. You may want to turn them half-way so that both sides get the nice brown char.
  4. Sprinkle with a little salt and enjoy!
