This Peruvian dish tastes amazing. Normally, the potatoes are fried like French fries and added to the dish, but we have chosen to bake them so it is much healthier. This is a rustic dish that will be great for dinner. Don’t be afraid to serve this with rice, it’s very Peruvian to eat it this way!
- Preheat oil to 450F. Cut potatoes into thin match-sticks, similar to French fries. Season with 1/2 tsp salt and 1 tsp oil. Place on a baking sheet and bake for 20 minutes, keeping an eye and turning them once in a while. Set aside when cooked.
- Heat oil on a large pan over medium-high heat. Add onion and cook until softened. Add garlic
- Add tomatoes and chicken thighs. Cook until one side of the chicken is brown then flip and stir. The chicken should have a nice color and tomatoes should be softened.
- Pour in vinegar, chicken broth and soy sauce. Then add the baked potato fries and mix. Season with more salt if needed and enjoy!
