Mason Jar Salad (makes 2)

This Mason Jar Salad is great to bring to school or work because everything is in just one jar. Create your own by following the order, but feel free to experiment with different kinds of vegetables for texture, color as they give you more vitamins and minerals. This is also a fun and simple project to get your child in the kitchen and let them build their own salad!

  • 1 cup lettuce
  • 1 cup cooked barley
  • 1/2 cup onions, chopped
  • 1/2 cup apples, chopped
  • 1 cup chickpeas
  • 2-4 tablespoon dressing
  1. Prepare a mason jar. Place dressing, then hard vegetables, soft vegetables, grains and lastly top with leafy greens.
  2. Place lid on and shake to combine before you eat. If you following this order of vegetables, your salad will stay fresh for up to 5 days in the fridge!
