A good grilled chicken recipe is a staple because you can put this in anything! For our Mediterranean theme reception, we served this with whole wheat pita bread, but this would taste great with salad or pasta as well!

Grilled Chicken (serves 4)

  • 2 lbs chicken thighs (skin removed)
  • 1 tsp dried rosemary
  • 1 tsp dried oregano
  • 4 cloves garlic, minced
  • 1 tbsp salt
  • 2 tbsp olive oil (for cooking)
  1. Marinate the chicken at least an hour before cooking. You can also marinate it overnight to really let the flavors seep in!
  2. Preheat oven to 375 F. Arrange chicken thighs on a baking sheet and drizzle with olive oil.
  3. Bake for 20-30 minutes until the chicken is cooked. Let the meat rest for 10 minutes until serving. This step will keep the juices in the chicken. Enjoy!
