Another recipe from the Mediterranean that will take you back to the beautiful Greek sea. Even if you don’t have time for a holiday, this Greek Pasta Salad is refreshing and light, great for the hot summer days!

Greek Pasta Salad (serves 4-6)

  • 1 box Whole wheat rotini pasta
  • 1/2 Tbsp olive oil
  • 1 tsp salt
  • 1/2 cup cucumber, diced
  • 1/2 cup tomatoes, diced
  • 1/2 cup carrots, shredded
  • 1/2 cup reduced-fat Feta, crumbled
  • 1/4 cup Cilantro, chopped
  • salt, pepper, olive oil
  1. Boil water and add salt and oil. Cook pasta according to package directions. Drain and let cool.
  2. Toss cucumber, carrots, tomato, feta cheese and cilantro in a bowl. Add cold pasta.
  3. Drizzle with olive oil, salt and pepper to taste. Keep cool or refrigerated until serving and enjoy!
