Although Chinese food tastes amazing, there is always a stereotype that it can be greasy and too salty. Most of the time, my mother would cook Chinese food but all were very healthy and not greasy at all. One of my favorite dishes would have to be this cucumber salad. It’s a very speedy dish, everything is done in 15 mins, and maybe another 15 mins in the fridge. Of course you can also do this in advance and it’s always great to have this ready in the fridge waiting for you.

Chinese Cucumber Salad (Serves 2)

  • 2 Cucumbers
  • 2 tsp Sugar
  • 1 tsp Salt
  • 1 clove garlic, minced
  • 1/2 Tbsp Sugar
  • 1/2 Tbsp Vinegar
  • 1 Tbsp Soy Sauce
  • A few drops of Sesame Oil
  1. Slice cucumbers into bite-sized pieces. Add sugar and salt, mix and let rest in the fridge. (Adding salt helps take out the water in the cucumbers , making it more crunchy.
  2. To make the sauce: Combine all the sauce ingredients and taste. It’s very flexible. You may even want to add some chili pepper flakes, pepper etc. Be creative!
  3. Take cucumber out and drain away all excess water. Combine with sauce and keep cool in the fridge until ready to eat.

Tip: It tastes better after sitting in the sauce for longer, so doing this in advance is a great idea!
