Using cauliflower to make pizza crust is the trend nowadays! The tip is to squeeze all the extra moisture out to ensure a dry crust! Next time when you crave for late-night pizza, try this instead and don’t feel bad.
Cauliflower pizza (Serves 2-4)
- Preheat oven to 400F.
- Chop cauliflower into chunks and pulse in a blender until it looks like rice.
- Boil an inch of water and add cauliflower. Cook for 4 minutes and drain.
- When cool, place cauliflower in a tea towel and squeeze until all the excess water is out. This step is important for a dry pizza crust.
- In a bowl, mix cauliflower “rice”, egg, cheese, salt and oregano until a dough forms.
- Press dough into pizza crust shape and bake for about 30 minutes. The crust should be firm now.
- Add your toppings, top with cheese and bake again until the cheese is all melted. Serve immediately and enjoy!
