Using cauliflower to make pizza crust is the trend nowadays! The tip is to squeeze all the extra moisture out to ensure a dry crust! Next time when you crave for late-night pizza, try this instead and don’t feel bad.

Cauliflower pizza (Serves 2-4)

  • 1 head cauliflower (small, about 2 lbs)
  • 1 egg, beaten
  • 1/3 cup skim mozzarella cheese, shredded
  • 1/4 tsp salt
  • 1 tsp dried oregano
  1. Preheat oven to 400F.
  2. Chop cauliflower into chunks and pulse in a blender until it looks like rice.
  3. Boil an inch of water and add cauliflower. Cook for 4 minutes and drain.
  4. When cool, place cauliflower in a tea towel and squeeze until all the excess water is out. This step is important for a dry pizza crust.
  5. In a bowl, mix cauliflower “rice”, egg, cheese, salt and oregano until a dough forms.
  6. Press dough into pizza crust shape and bake for about 30 minutes. The crust should be firm now.
  7. Add your toppings, top with cheese and bake again until the cheese is all melted. Serve immediately and enjoy!
