Spinach Quesadillas (Serves 2)

2 wheat tortillas

2 cups spinach

1/2 cup reduced-fat cheddar cheese

1/2 cup red peppers, cut into strips

Method:

1. Heat a large pan over medium-high heat. Place 1 tortilla and sprinkle half of the cheese on top. Top with spinach and red peppers. Cover with remaining cheese and place the second tortilla on top.

2. Cook the bottom tortilla for about 3 minutes or when it starts to brown. Flip and cook for another 2 minutes. Cut into wedges and enjoy!
